They continue to prune a type of Wine (Sangiovese) who everybody tried to imitate, but only in this area it gives the best of itself. They transform it into wine wich ages in small oak barrels. They continue to pick olives by hand when they’re ripe, but before they fall down; so you can taste the true “bruschetta”
